pork ragu with wholewheat penne
This is a recipe that i thought up tonight because i seen an italian family have a very unhealthy version of it on tv and wanted it, but as fattening is not heart healthy (or waistline healthy) then we needed to fix it up good :) i hope you enjoy it as much as my non pasta loving mum did....haha

  • 4 cup(s) of wholewheat penne
  • 4 pork loin steaks, fat removed kept whole
  • 1 onion, peeled and cut into wedges
  • 1/2 cup(s) of white wine
  • 1 tbsp. of balsamic vinigar
  • 1 pint(s) of passata
  • 1 cup(s) of chicken stock
  • 2 bay leaves
  • 1 sprig of rosemary
  • 1 pinch of salt and pepper
  • 1 pinch of cayenne pepper
Steps
  1. brown your meat and onion in a non stick pan with a spritz of cooking spray but dont cook all the way through and then start adding in your ingredients, let your wine bubble off for a few mins to cook off the alcohol burn off then add the tomatoes.
  2. let your meat ragu bubble on a low heat for an hour and half remember to stir and break up the meat as your cooking and add a splash of water if it dries out.....
  3. remove your rosemary stem and bay. once its ready and all the meat has melted into a mooshy ragu then you can start to cook the pasta according to packet instructions, and you will toss your pasta thru your sauce and using a splash of the starchy water the pasta cooked in to thicken the sauce and help it adhere to the pasta better......
  4. now all thats left to do is portion it into bowls and grate a light sprinkle of parmasan ontop......easy peasy and super yummy!!
