How To Brunch Like A Skinnygirl

Brunch – I feel like it’s all I’ve been talking about lately. I may need a lesson in “proper brunch etiquette” from Ramona but you know throwing a fantastic get-together is my forte.

I made sure to have all of the essentials on hand when Luann, Kristen, and Heather came over on this week’s episode of The Real Housewives of New York. Throwing a classy brunch doesn’t have to be hard. In fact, if you do it right, it can actually be pretty stress free.

“Bitches Who Brunch” may not actually be my next book title but I still wanted to share how to throw a proper brunch for all of your B’s.


The perfect brunch begins with drinks and it’s a good idea to have a wide selection so your guests have options. Of course you’ll want to have a few boozy drinks on hand but also incorporate coffee and juices or smoothies.

Instead of playing host AND bartender, put your ingredients out and let your guests create their own concoctions.

Bloody Mary Bar

– Skinnygirl Cucumber Vodka & homemade Bloody Mary Mix from Skinnygirl Cocktails
– Serve with different garnishes (celery, olives, cucumber… get creative!) and hot sauce for guests to customize their drink

Wine & Bubbly

Skinnygirl Moscato and Skinnygirl Rose
Skinnygirl Prosecco & Peach juice

Boozy Iced Coffee

Skinnygirl Bare Naked Vodka, Creme de Menthe, and coffee
– Sweetened with Skinnygirl Liquid Sweetener and served in a mason jar


– Frozen fruit of your choice, bag of kale, coconut water, and apple juice
– Combine ingredients in Skinnygirl Bella Life personal blender, blend until smooth


Keep your brunch foods simple (nothing on my menu took longer than 15-20 minutes to make). How you serve your brunch items are just as important as what you serve. Your serving dishes and decor are what really make everything come together. I served mine on a set of heart shaped “love” plates and mugs from Williams-Sonoma.

Rainbow Fruit Skewers

– Strawberry, mango, pineapple, and honeydew over blueberries

Mini Muffins With Preserves

– Plain and Blueberry

* Recipe from The Skinnygirl Dish
– 1 ¼ cup oat flour
– ¾ cup raw sugar
– 1 ½ tsp baking powder
– ¼ tsp salt
– ½ cup soy milk
– 2 tbsp trans-fat-free shortening, melted
– ¾ tsp real vanilla extract
– ¾ cup fresh blueberries

1. Preheat oven to 350 degrees F. Line a cupcake or muffin pan with liners.
2. Combine the flour, sugar baking powder and salt in a bowl. In another bowl combine the soy milk, melted shortening, and vanilla extract.
3. Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the blueberries.
4. Drop the batter into the muffin liners. Bake for 20 minutes, rotating the pan after 10 minutes so that the muffins cook evenly. When done, Let cool for at least 15 minutes and serve warm.

Mini Frittatas

– Feta, spinach, sundried tomato with oil and eggs.
– Mix all ingredients together; spray muffin tray; put egg mixture in mini muffin tray and bake at 375 for 10 minutes.


– Whole wheat, sesame, plain served with low-fat vegetable cream cheese and plain cream cheese


– Sausage and turkey bacon


Keep your attire classy but comfortable. During my brunch on RHONY, I wore a Tibi Top/Pant Set.
