Brunch Hack: Bellinis, Skinnygirl-Style
Nothing beats the crisp sweetness of a Bellini at brunch. If this Skinnygirl cocktail doesn’t motivate you to work for the weekend, nothing will.
– ½ oz white peach puree
– 4 oz Skinnygirl Prosecco or other sparkling wine, chilled
– Splash of lemon Sour Mix
Spoon the white peach puree into the bottom of a champagne flute. Top with the prosecco and sour mix.
Variation: This is great with other fruits, too. Blood oranges, mangos, and raspberries all work wonderfully. You can make your own puree by muddling or blending whatever fruit you like — just be sure to remove any pits or peels before you blend and strain the puree before using it.
