I recently received the following message from fellow Skinnygirl, Suzy DeKay, sharing how she made my Happy Accident Chicken recipe by using what she had.  Check out this delicious variation.

“Hi Bethenny and crew- Wanting to make some marinade tonight but not wanting to go to the store, I used your handy ‘Happy Accident Chicken’ recipe from the website and it turned out delicious. Just used whatever was already in my kitchen.  I’ve attached a photo—I didn’t have any Tabasco so used Tapatio hot sauce…nice and spicy! Thanks again for the easy recipe!”

I appreciated her sending me this quick message and filling me in on her kitchen experiments so much so that I wanted to share it with the rest of the community.

I think it is important to know those in your community, so I thought it might be fun to start a “Skinnygirl Spotlight” column where you, my fellow Skinnygirls (and guys) can be spotlighted for the wonderful things you do.  Whether it be a new recipe you created, a funny situation you’ve been in, or just a great story you would like to share, I want to hear it and share it.

So let’s all meet our first Skinnygirl Spotlight, Suzy:

Q: Who is Suzy?
I’m a single, mid-30’s, busy working professional, living in Kirkland, WA just outside of Seattle. And I have a pug named Winston that you can hear snorting a mile way.

Q: What do you like to cook most?
Anything that is quick and easy, since I don’t have a lot of time to cook. Living in the Northwest, we have access to some of the best salmon in the world…so my go-to is salmon seasoned with a salmon rub or just olive oil, salt & pepper. Yum!

Q: What are your hobbies?
I love going to hot yoga, spinning, trying out new restaurants, traveling the world, and spending time with friends and family.
