
“Out of this World” Healthy Stuffing"
Sauté 1 large chopped onion and 3 stalks of celery (chop everything small) in 1 T of oil in a nonstick pan. Add salt and pepper (approx ½ tsp of each) Add 1-2 cloves of minced FRESH garlic.
Add 4 pieces of sage and leaves from 6-8 pieces of thyme (chop all herbs) Add 1/2 lb. turkey sausage (it comes in different flavors so choose your favorite-fennel is often delicious) take sausage out of its casing (if not done already), break into small pieces and sauté in the pan. Add a good splash of good wine and 1 tsp. of butter.
Now add 1 lb. of sliced assorted fresh mushrooms and, if you can find them, ½ C dried morels (soak them to cover them in water until soft) then add them and their mushroom water as well. Add ½ loaf of regular size 9-grain or multi-grain bread (toasted and chopped). If the mixture is dry, add more mushroom water, chicken stock, white wine or another flavored liquid. Add salt and pepper to taste. Add 1 beaten egg to bind.
Bake at 350 for 25 to 30 minutes and put on broil for last 5 minutes to make top crunchy (make sure to keep an eye on it when broiling).
