Cauliflower-Leek Soup

I am going to make this as I love leek and potatoe thanks xx

How many servings does this make? And how much is a serving? Thanks ;o)

It serves about 12...so enough for one bowl each for 8-10 people.  I recommend freezing the left overs if you don't finish the original batch.  Hope that helps!

Bethanny! I LOVE this soup! Have you ever tried roasting the veggies?? It really kicks it up a knotch :o)

I made this soup over the weekend--delicious! I also added a shallot, because I had one rolling around in my vegetable drawer. I recently bought an immersion blender--man, that thing is a lifesaver! Anyway, it's a good, easy soup and I had enough leftover to freeze (we're only a household of 2).

I made this soup on Friday.. I added an onion... delicious!
