Whole Grain Blueberry Pancakes
There’s not many things better than breakfast in bed on Mother’s Day. Pair these easy to make blueberry pancakes with and my Mommy Juice Cocktail and you’ve got a breakfast fit for a queen.
– ¾ cup multigrain pancake mix (such as Arrowhead Mills)
– 1 tbs canola oil
– ⅓ cup plus 2 tbs soy milk or almond milk
– 1/2 cup fresh blueberries
– Toppings: A little bit of real maple syrup, powdered sugar, or jam
Combine pancake mix, canola oil, and milk in a bowl and stir until combined. Spray a nonstick griddle or skillet with cooking spray and place over medium heat. Pour ¼ cup of the mixture onto your griddle or skillet and sprinkle with a few blueberries. Cook over medium heat for 2-3 minutes, or until the bottoms are golden brown. Drizzle/sprinkle with desired toppings once all of the batter has been cooked.
