Skinnygirl Tequila Lime Chicken

Skinnygirl® Cocktails are good for more than just pouring into a glass. The wines and margaritas make great meat marinades, especially since I’ve been doing so much grilling this summer. For every cup I use in the recipe, I like to pour a cup for myself as well. It makes waiting for the dish to marinate a bit more fun.

This is a very versatile dish and it is really all about the marinade. You can use it on a chicken breast or chop up the breast and add to skewers or even fajitas.


– 4 limes
– 1 cup Skinnygirl® Margarita (or your favorite tequila)
– 1/4 cup olive oil
– 2 teaspoons kosher salt
– 5 cloves of garlic
– 1 jalapeño, sliced
– 1/2 bunch fresh cilantro
– 12 boneless skinless chicken breasts


1. To create the marinade, slice the limes and squeeze the juice into blender. Add tequila, olive oil, salt, garlic, jalapeño, and cilantro. Blend the mixture until totally combined.
2. Add the chicken and marinate to a plastic bag. Marinate for several hours or overnight.
3.Grill the chicken on a stove or place them on skewers and grill. Cook thoroughly and serve.
