Skinnygirl Inspired Cinco de Mayo Recipes

I recently reached out via my Facebook and Instagram to ask my followers if they had any Skinnygirl-inspired recipes for Cinco de Mayo. Everyone shared some amazing suggestions that incorporated some of my favorite Skinnygirl products. I picked a few of my favorite recipes and shared them below. Enjoy!

Skinnygirl Margarita Bundt Cake

– 1 box of yellow cake mix
– 2 small boxes of instant vanilla pudding
– 1/2 cup of veggie oil
– 2 cups Skinnygirl Margarita, divided
– 4 eggs
– 4 cups powdered sugar
– 1 stick butter, softened
– Coarse salt or sprinkles to garnish

Directions: Preheat oven to 350 degrees. Combine cake mix, pudding, oil 1 1/4 cup Skinnygirl Margarita and eggs. Mix well. Pour into separate prepared pan and bake for 40-45 minutes. To make the frosting, combine powdered sugar, butter, and a few splashes of Skinnygirl Margarita and blend until creamy. Allow cake to cool and spread on frosting. Garnish with salt or sprinkles.

Quinoa Burrito Bowls

– 1 package of Quinoa (cooked)
– 1 diced onion
– 2 cloves of garlic
– 1 can black beans, rinsed and drained
– 1 tsp cumin
– 1 tsp chili powder
– Lettuce
Skinnygirl Salsa of your choice
– Greek Yogurt (optional)
– Avocado (optional)

Directions: Sauté diced onion and garlic in olive oil. Add black beans to the pan and sprinkle in cumin and chili powder. Stir and sauté for one minute. Add enough water to cover all the beans and cook on medium heat until the beans look saucy. Take over heat. Layer quinoa, lettuce, black beans and skinny girl salsa in a bowl. Top with Greek yogurt and avocado.

Spanish Chicken Over Rice

– 3 oz chicken breast
– 1 cup corn
– 1 cup rinsed black beans, rinsed
– 2 cups Skinnygirl Salsa of your choice
– Salt & pepper to taste
– 2 cups cooked rice

Directions: Combine chicken, corn, beans, salsa, and seasoning in a crockpot on low for six hours. Once finished, pour over cooked rice for a easy weekday meal for one or many!

Cranberry Margarita

– 3 oz Skinnygirl Margarita, over ice, splash of cranberry & fresh lime
– 1 oz cranberry juice
– fresh lime wedge for garnish

Directions: Pour over ice and garnish with lime.

Spicy Cucumber Margarita

– 3 oz Skinnygirl Spicy Lime Margarita
– ½ cucumber, sliced
– Ice

Directions: Muddle cucumber slices at the bottom a glass. Fill with ice and pour in Spicy Lime Margarita or combine ingredients and blend until smooth.

Spicy Avocado Margarita

– 2 cups crushed ice
– 8 oz Skinnygirl Margarita
– 1 avocado; peeled and pitted
– pinch of cilantro
– ⅓ Serrano or Jalapeno pepper

Directions: Combine ingredients in blender and blend until smooth.

Watermelon Margarita
