Salad Inspiration – Sweet and Crunchy Spinach Salad

I often feel like people always eat the same salad with the dressing and they don’t really branch out and try new combinations. I have been on an arugula kick lately because it’s such a great green. It’s darker so it has an abundance of antioxidants. Adding baby spinach really balances the two greens and the corn, peppers and tomatoes bring a variety of color to the salad which I love.

Ingredients

– Arugula
– Baby Spinach
– Raw Corn
– Chopped Mini Colored Sweet Peppers
– Baby Tomatoes
– Shredded Vegan Cheese
– Salt & Pepper
Skinnygirl Dressing

Directions: Play around with the ingredients and add in as much of each as you prefer. Combine all of ingredients and toss.
