Salad Inspiration – Baby Greens Salad

Salads are a great way to use what you have because the greens provide a fresh crunchy background for meat, chicken, fish, grilled vegetables, beans, or whatever you feel like eating. Salads can be made out of so many different ingredients that they are one of the easiest ways to start practicing your creativity.

When creating a salad I usually start with a handful of greens per serving. Then I add about ½ cup of classic raw vegetables, ¼ gourmet vegetables and a tablespoon of one or two special ingredients, such as a bit of finely grated or crumbled cheese, dried fruit or chopped nuts. Dribble with just a little bit of good dressing and you’re set!


– Baby Kale
– Baby Arugula
– Chick Peas
– Avocado
– Baby Tomatoes
– Feta
– Salt & Pepper
– Skinnygirl Poppyseed Dressing

Directions: Combine all of ingredients and toss with dressing.
