Guilt-Free Fries

Potatoes are a starchy vegetable, but they are still a nutrient-dense vegetable, so I’m sharing this seemingly decadent but actually good-investment recipe for fries. Skip the fast food and make these at home. You’ll be glad you did.


– 4 baking potatoes
– 1 tablespoon olive oil
– ½ teaspoon salt
– ½ teaspoon black pepper
– ½ teaspoon paprika

(Serves 4)


1. Preheat the oven to 425° F. Cut the potatoes into wedges or strips, leaving the skins on. Toss them with the olive oil, salt, and pepper. Arrange them in a single layer on a foil-lined baking sheet. Sprinkle with the paprika.

2. Bake for 35 to 45 minutes, or until the potatoes are crisp. Serve hot.
