CauliFLOWER Recipes for Valentine’s Day

Cauliflower is the new kale. This stuff is EVERYWHERE. Whenever there’s a new food trend, I’m always a little wary. Is it really that good (or good for you)? I tried cauliflower steaks, and they were not like steak. I was skeptical about cauliflower puree too, but now I’m a total convert.

If you follow me on Snapchat, you’ve probably seen me experimenting with this “miracle vegetable” a lot lately. It’s a good investment food, and a good substitute for mashed potatoes. But what really sold me is that it’s so easy to prepare. You don’t need to buy the whole cauliflower and do it yourself – there are products you can buy to make it quicker and easier. So many people make cauliflower crumbles that are ready to go.

As promised, I’m sharing my new recipes for cauliflower puree and cauliflower rice – the only FLOWERS you need this Valentine’s Day. Just try not to get addicted to this easy to make, delish good investment dish.



– 2 Bags of Cauliflower Crumbles
– 1 Can of Vegetable Broth, Organic or Other
– Garlic and Garlic Salt, to Taste
– Optional: Parmesan Cheese, Olive Oil, Butter


Boil the cauliflower in the broth until totally soft. Season to taste by squeezing in garlic (I like tubes of organic garlic) and adding garlic salt. Use a good amount of salt, but don’t use pepper. Use a Skinnygirl Blender or blender of your own to puree. This gives it a whipped texture like mashed potatoes.

For a non-vegan option, you can choose to add parmesan cheese, olive oil, or butter for a finishing touch and a little extra flavor.



– 2 Bags of Cauliflower Crumbles
– Frozen Peas
– Olive Oil
– Salt & Pepper


Take olive oil, salt, pepper, frozen peas, and any other seasoning that you like, and sauté it for awhile with the cauliflower. Keep moving it around. You want it to be slightly browned on the bottom. You can add vegan cheese if you want – this adds a binding effect to the cauliflower rice that I enjoy, but is not necessary. You can always add non-vegan cheese instead if that’s more your thing.


– I like Green Giant or Fresh Direct’s crumbles. The square containers are the best one. Find in the produce section.

– Frozen cauliflower adds water, so know that your puree will be wetter. Whole Foods makes a good one – it has a larger grain. I like details.

– Trader Joe’s makes a good shredded soy cheese that I’m loving in my cauliflower rice.
