Better-Than-Kale Arugula Salad

Is it just me or is kale taking over? Kale chips… Kale salads… Kale bowls… If you ask me, kale needs to #GetOffMyJock. Can’t a girl just get arugula or romaine in her salads?! I recently made this tasty arugula salad after an intense yoga session. It was light but incredibly filling.

Arugula is an excellent source of vitamins A, B, and K and 100 g of fresh leaves are just 25 calories. What I like about arugula is that it has a bit more of a peppery taste, which really helps give this salad some natural flavor.

Ingredients:

– Wild Arugula
– Endive & Radicchio
– Avocado
– Tomato
– Cheese of your choice (preferably something with a strong taste)
– Egg
– Raw Corn
– Salt & Pepper To Taste

Directions: Combine and toss in a bowl. Sprinkle on shredded cheese. I used cheddar, but you could also use blue cheese or parmesan. Top with Skinnygirl Poppyseed Salad Dressing.
