Try Bethenny's Pasta Carbonara Recipe!

Ingredients

1 box whole wheat penne
1.5 Tablespoons olive oil
1 Tablespoon butter
1/2 cup freshly grated Parmesan
6 pieces turkey bacon chopped
1.5 teaspoons salt
1.5 teaspoons pepper
1/3 cup skim or soy milk
1 egg beaten
3 Tablespoons chopped parsley (optional)

Directions

Bring a pot of salted water to a boil, then add the penne pasta.

In a large skillet, sauté turkey bacon until crispy. Then coarsely chop. Place bacon back in the skillet.

Cook pasta al dente, drain, leaving pasta slightly wet (adds texture and thickness).

Add the pasta to the skillet with the bacon, add the remaining ingredients and fold until well mixed.

Not a great recipe. It was really dry. I added more milk and butter and it seemed to only be a temporary fix. I also added more pasta water. Smeh. My husband didn't seem to mind though.

I just love the Bethenny show. Bethenny is so real and down to earth. I just love the different folks that she brings on the show and the various discussion panels. Bethenny you are Great. I'm a woman of color over 50 and it shouldn't matter, but I just want to let you know that you cover all the basis for all women from various walks of life. I wish you much happiness in your future.
