1 head cauliflower
1 cup almond milk
1 cup almond flour (fine)
1 tsp garlic powder
1 1/4 cup buffalo sauce
1 tbsp butter or olive oil (optional)
Preheat the oven to 450 degrees.
Chop the head of cauliflower into small pieces. In a bowl, combine the almond milk, almond flour, and garlic powder. Let it sit for a few minutes before adding the cauliflower.
Coat the small pieces of cauliflower in the almond milk mixture. Shake off the excess batter and place on a baking sheet prepared with cooking spray. Bake in the preheated oven for 10-20 minutes.
Remove the cauliflower from the oven and toss in the buffalo sauce. Place the cauliflower back on the baking sheet and bake for another 8 to 10 minutes.
Allow to cool slightly and sprinkle blue cheese on top.
