Cauliflower-is-the-new-kale

Ingredients

1 head cauliflower
1 cup almond milk
1 cup almond flour (fine)
1 tsp garlic powder
1 1/4 cup buffalo sauce
1 tbsp butter or olive oil (optional)
Cooking spray

Instructions

Preheat the oven to 450 degrees.

Chop the head of cauliflower into small pieces. In a bowl, combine the almond milk, almond flour, and garlic powder. Let it sit for a few minutes before adding the cauliflower.

Coat the small pieces of cauliflower in the almond milk mixture. Shake off the excess batter and place on a baking sheet prepared with cooking spray. Bake in the preheated oven for 10-20 minutes.

Remove the cauliflower from the oven and toss in the buffalo sauce. Place the cauliflower back on the baking sheet and bake for another 8 to 10 minutes.

Allow to cool slightly and sprinkle blue cheese on top.

I just made these and they were delicious. I skipped the butter and blue cheese, but they were still great. I even like the almond batter on the cauliflower without the buffalo sauce. I think I'll try that next time with a bit spicier batter.

Will love to try these new ways with cauliflower. Have been roasting cauliflower with light sesame or olive oil and pepper for a while. It got me to eat cauliflower without having intestinal discomfort. I love kale and spinach also in last few years, chopping up, saving in fridge, ready to add to most hot dishes, cold salads, or a smoothie. They don't have strong green taste, but full of nutrients. Wish to see more ways to eat veggies on the show.
