Takeout Fakeout: Asian Shrimp Salad!

Takeout is a quick and easy meal when you're tired from a long day, but it is often filled with calories you really don't need. Bethenny renovates these restaurant favorites to help you feed your kids and learn some new skills in the kitchen while cutting unwanted calories!

Ingredients

1 package of pre-washed fresh baby spinach
1 head Napa cabbage, shredded
1 pound sugar snap pea pods, halved
1 small can of water chestnuts, drained and sliced
1 cup shredded carrots
1 pound cooked, chilled shrimp
1 bunch scallions, chopped, green parts only
4 ounces sliced toasted almonds

Directions

Toss all ingredients together in a bowl and serve with Asian Dressing.

Asian Dressing Ingredients

2 teaspoons fresh ginger
4 teaspoons dark sesame oil
1/2 cup rice vinegar
4 teaspoons soy sauce
2 teaspoons Dijon mustard
2 teaspoons minced garlic
6 tablespoons extra-virgin olive oil

Whisk all of the ingredients together in a bowl.
