Takeout Fakeout: Pad Thai

Try Bethenny's Healthy Pad Thai recipe for a quick and easy dinner that will have you tossing your takeout menus in the trash!


Try this Pad Thai for a quick and easy comfort food dish.

Calories from a restaurant: 950 calories/30 grams of fat
Calories from this recipe: 142 calories/5 grams of fat 

Makes 4 servings

Ingredients

1 package of Asian rice noodles
2 tablespoons soy sauce or tamari
1 clove garlic, minced
1/2 teaspoon chili paste
1/2 teaspoon minced fresh ginger
1/2 teaspoon fish sauce
1 teaspoon honey, warmed so it is soft
1/2 teaspoon fresh lime juice
1/2 teaspoon toasted sesame oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
1 1/2 tablespoons chopped cashews

Directions

Cook and drain the rice noodles according to the package directions. Set aside.

In a small bowl, combine the soy sauce, garlic, chili paste, ginger, fish sauce, honey, lime juice, sesame oil, salt, and pepper. Whisk until blended and pour over noodles. Toss to coat, top with cilantro and cashews.

Serve warm.

Bethenny, I am sorry your show got cancelled. I have to say your honesty, straight forwardness had me engaged. Ok there are a couple of things I would have changed about your show, but overall you are a great interview, a "girlfriend" who asks the questions that we want to know and you ask them. You have always been the one to be a straight shooter. I know you will go far in this business and maybe there will be another forum for you to do the same thing again. If Ellen can engage audiences so can you. Keep up the great work and I hope the viewers will not have to wait too long. Love your receipes as well, you had great guests and I have to say also I recorded your show and learned alot. Sheryl, from Toronto Canada.

What about the carrots and sprouts I see in the picture. Bethenny also mentioned chicken or tofu on the show and yes I thought she said to NOT add salt. Can you please post the full recipe that was on the episode that aired. I look forward to trying it out.
