Summer Recipes That Make You Go Mmmm: Bethenny's Chopped Salad

Making a delicious salad doesn't have to involve fancy ingredients or a lot of prep work. Simple foods like fresh vegetables taste especially good in the summer.

One dish Bethenny loves is a big chopped salad — it's healthy, and all the ingredients are incredibly easy to find in the grocery store:

Chopped Salad

Iceberg lettuce
1 cucumber, chopped
2 tomatoes, chopped
1 avocado, chopped
1/4 cup of corn, cut off the cob
Balsamic and ranch dressings mixed together
3 Tbsps. shredded Mexican cheeses
Salt and pepper to taste

Recipes like this are the way to fill up and still feel great about yourself, especially the day before hitting the beach. Rock that bikini, girl!
