My Salad Secrets for Your Summer Cookout
I don't eat raw vegetables every day, even though it would be great if I did. Sometimes I just don't have a chance and sometimes I'm just not in the mood. However, I try. Here are a few quick hits on how to reinvent your summer salad:

* Give your salad a fresher taste by muddling up the basil, mint, or parsley in the dressing.

* Forget an old-school pasta salad with all that mayo and crap. Instead, use whole-wheat elbow macaroni with vinaigrette and veggies.

* Instead of a regular salad, try mixing just corn, avocado, basil, and tomato. I swear it's just as good, and it's healthier.

* One of my favorite tricks for dressing up a generic cucumber salad is to add asparagus. Great mix of tastes!

I love adding crunchy toppings to my regular salads. Sunflower seeds, chow neon noodles, sesame sticks. Anything to give it a crunch!

I recently tried Tabbouleh for the first time. It's a herb and bulgar wheat salad and is amazing. LOADS of parsley, EVO, some mint, vine tomatoes, lemon juice, red onion and salt. There are different variations out there but I tried only these ingredients and loved it, and it is so good for you.

Best salad dressing for a colorful bell pepper/celery/green onion/basil salad:

(Serves about 6-8)
Dice 2-3 different colored bell peppers/3 sticks of celery/2-3 green onions.
I use a lot of basil - loosely chop about 1/2 cup of basil - or to taste.
Combine the following ingredients, then add to the veggies:
Veganaise Dressing (about 1 cup)
Bragg's Raw Apple Cidar Vinegar (about 2 tbsp)
Raw Coconut Aminos (about 1-2 tbsp)
Minced Garlic (about 1 tspn)
Add more dressing, garlic, etc. to taste.

My favourite ingredient to add to a salad is tarragon, such a delicious herb, and gives a wonderful flavour to your other ingredients.
