The 10 Best Easy & Healthy Recipes of 2012

I love sharing my recipes with all of you! Here’s a countdown of ten of my easy and healthy recipes that you guys loved this year. This list is also a great resource for kickstarting a healthy 2013:

10. Rustic Mashed Potatoes

White beans, soymilk, and ricotta cheese are the ingredients that give these homemade mashed potatoes an incredibly rich texture, without the extra calories. I love serving these around the holidays.

9. Raspberry Mint Lemonade

This recipe for raspberry lemonade is perfect to share with the kids on a hot summer day. Sweetened with agave and fresh fruit, it won’t make you crash the way sugary juices or sodas will.

8. Italian Turkey Burgers

Ground turkey is much leaner than beef, and this turkey burger recipe delivers the flavor you crave from a hamburger without all the extra fat. Top with a shredded Italian cheese like provolone or mozzarella and dig in.

7. Classic Crab Cakes

This classic and classy appetizer dish gets a healthy makeover with whole wheat bread crumbs and low-fat or soy mayonnaise.

6. Sundried Tomato Grilled Chicken

If you’re looking for a healthy grilled chicken recipe, look no further. Red wine, garlic, and parsley make this a flavorful entrée you can serve at any time of year. Serve with one of my healthy side dishes for a delicious post-holiday dinner.

5. Vegan Coconut Cupcakes

This vegan cupcake recipe looks beautiful topped with shaved coconut and it tastes even better. Oat flour and soymilk may sound like unusual ingredients but they taste fantastic in this dessert.

4. My Party Guacamole

My guacamole dip recipe is perfect for any get together, whether it’s a holiday party, game day, or DIY spa day with the girls. Skinnygirl tip: Serve with carrots, jicama, bell pepper and cucumber spears instead of chips to cut out excess sodium and fat.

3. Pomegranate Smoothie

When it comes to breakfast in a blender, my Pomegranate Smoothie recipe was a winner. Pomegranates are in season right now, and this smoothie is the perfect way to detox the day after a heavy holiday meal.

2. Skinnygirl Cucumber Refresher

Your favorite cocktail recipe of 2012 was my Skinnygirl Cucumber Refresher, made with Skinnygirl Cucumber Vodka, fresh mint, cucumber slices, and agave nectar. Makes me wish for summer!

1. Amazingly Moist Low Fat Brownies

This won hands down for 2012’s most popular recipe. The secret to this super moist and chocolatey brownie recipe is ricotta cheese and egg whites.

Here’s to a healthy 2013!
