Cool Cucumber Salad

Serves 1

Ingredients:
1 medium cucumber
1/4 cup apple cider vinegar
1 tablespoon chopped fresh dill, plus sprigs for garnish (or your favorite herb)
1 teaspoon honey
1 teaspoon lemon juice
Salt and pepper to taste

Preparation:
Peel and thinly slice the cucumber. Put the slices in a bowl and set aside.

In a separate bowl, whisk together the vinegar, dill, honey, and lemon juice. Pour over the cucumbers and toss to coat. Season with a little salt and pepper.

Cover with a lid or plastic wrap and refrigerate for at least 30 minutes to chill and incorporate the flavors. Enjoy the salad cold. Garnish with a few extra sprigs of fresh dill.
