Wheat-Free Vegan Double Chocolate Chip
Makes 15 cookies
Bake Time: 25 minutes
1/4 cup vegan butter, softened
1 1/2 cups raw sugar
1/2 banana mash = 1/3 cup banana
2 teaspoons vanilla extract
2 cups oat flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
11/4 cup semi sweet chocolate chips
1 cup vanilla soy-milk
Preheat oven to 350 degrees. In large bowl, mix the butter, sugar, banana and vanilla with a potato masher.
In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Stir the flour mixture into the butter mixture until well blended. Mix in the chocolate chips.
Use a 3 oz. ice cream scoop to drop the cookies onto a cookie sheet, lined with parchment paper to prevent sticking.
Bake for 15 minutes then rotate in oven. Take out after 25 minutes; cool slightly on the cookie sheet before transferring to wire racks to cool completely.
