
Q: I love eggplant parmesan, however, I know the caloric content is extremely high. Can you share a modified recipe that will lower the calories of this dish and still taste great?!
A: This is an easy fix. You can either grill the eggplant then layer, just as the recipe states, OR, bread your eggplant using egg whites and breadcrumbs and bake rather than fry. Then use part skim mozzarella.
