Q: I love eggplant parmesan, however, I know the caloric content is extremely high. Can you share a modified recipe that will lower the calories of this dish and still taste great?!

A: This is an easy fix. You can either grill the eggplant then layer, just as the recipe states, OR, bread your eggplant using egg whites and breadcrumbs and bake rather than fry. Then use part skim mozzarella.

  • Love Love Loved this recipe! my 3 year old cousin came over, and saw the leftovers i moved into a smaller dish, and she thought it was speggetti due to the sauce. And ate all of it in one sitting, and she is such a picky eater! When she eats healthy it makes me so happy!
