| Wasabi Tuna Burgers |
Amazing tuna burgers, topped off with wasabi mayonnaise.
Makes 12 servings.

Tuna Burger:
- 4 pounds sushi-grade ahi tuna
- 5 basil leaves, chopped
- 4 scallions, chopped
- 2 heaping tablespoons black sesame seeds
- 4 tablespoons low-sodium soy sauce
- 4 tablespoons honey
Wasabi Mayonnaise:
- 2 tablespoons wasabi paste
- 3 tablespoons low-fat mayonnaise (such as safflower)
- Salt and pepper to taste
- Juice of 1/2 lemon
- Juice of 1/2 lime

Tuna Burger:
- Combine all ingredients and form into 12 patties.
- Grill, turning once, until medium-rare.
- Top with wasabi mayonnaise.
Wasabi Mayonnaise:
- Combine all ingredients. (If you are pressed for time, wasabi mayonnaise can by found in most upscale supermarkets and health food stores.)

Looks good but the instructions are a bit vague. Do you mince the tuna before combining with the other ingredients? Or do you cut the tuna into 4 oz portions and then make a marinade with the herbs/honey/soy?
I’m not a huge tuna fan (although I still may try this recipe with it – they sound great!) Could I easily substitute ground turkey?

You can also use a sour cream/ mayo mix instead for a healthier version – or i like to use Greek yogurt

This recipe is just what I was looking for. You could use salmon too, I suppose, for salmon burgers. Yum. Thank you for this recipe. It’s so easy & quick, just my style.

Tuna or salmon \cakes\ (as we call them) are the biggest hit in my family. I wanted to add to your post that really any canned tuna or salmon (boneless and skinless) also works great – and to make them, you can add just about anything to them – and they always come out awesome! I use:
Trader Joe’s Boneless / Skinless Canned Pink Salmon,
Mayo,
Egg (to hold the patties together),
Green Onion (lots),
lemon,
Bread Crumbs,
Dijon Mustard,
Salt & Pepper
Dip them in any sauce – bbq, mayo, whatever! A GREAT DISH! Thanks, Bethenny!
I made these for dinner last night and they were a HUGE hit! I added about 1/2-1 teaspoon sesame oil and some lemon zest, and served with garlic mashed potatoes and a spinach salad with slivered almonds and sesame-soy dressing, which complimented the Asian flavor of the burger best. The recipe doesn’t say so, but you should chop the tuna up very fine and then use your hands to mash it all up.
Bethenny, have you considered suggestions for sides and pairings for your entree dishes, like salads that would go well with some of the recipes?
Congradulations on everything! I loved the tuna burger so did PAPA( my husband for 32 years) Went over very well , We live in Oregon City Oregon and have a great fish market down the road. I feel kind of stupid writing to you but I had to, I have watched the house wife shows, my daughter Melissa turned me on to them BUT I’m only hooked on yours. I fell in love with your realness( if thats even a word) Have you ever considered stand up? Whitty Girl! Are you going to go back on new yorks or have your own? If you don’t go back on New Yorks IT WILL FAIL. I watch it only to hear whats going to come out of your mouth next because we all know we can believe it. Thank You for a great recipe using Wasabi. I’ve taken your advice and used -what on hand- canned tuna,salmon and leftover lump crab–OMG I Love It! Thank you for writing a book with recipes that my 20yr old vegetarian daughter kept stealing from me–I’ve had to order another.
Had to try your guacamole recipe and I was not disappointed. That was fabulous. It has a small difference in taste but for the better. Can Not wait to try more recipes. One question, is it hard to breakdown the recipes to only serve 1 (one) person?
In addition, I do wish you well with yours and Jason’s new adventures in life. And it was truely amazing to see the calmness that had enveloped in your face and mannerism. I know it sounds corny however, Jason was correct about the change you have gone thru. The easier effections with the people in your life (your In-Laws, Julie, Max, Etc.) was amazing to watch. No hesitation in expressing your feeling with Love and Hugs. Remember; If God is watching us, the least we can do is be entertaining.

Fantastic! Made them tonight! When I ground the tuna in the grinder, I just threw in the basil and the seeds and everything into the grinder. Perfect. I added the onions last and not via the grinder. We lllllloooooooooooooveeeeed it !!!1!!!!!! Thanks!
