
Q: How do you find time to cook? The whole process of shopping, prepping, cooking seems so time consuming.
A: I stay away from complicated recipes, and I’m not a hero. I pick my battles. Store-bought fresh pesto with whole wheat pasta is jazzed up with fresh basil. I buy packaged greens and baby pear tomatoes. Just add some cheese, lemon and olive oil and you have a great salad. Any fish can be delicious with parsley, lemon, olive oil, garlic and salt and pepper. Wrap in foil and bake. No messing up pans. I roast vegetables on an aluminum foil-covered sheet pan so there is nothing to scrub. You do need a good knife and cutting board and a little time to chop some things, but dinner shouldn’t take more than twenty minutes.
