Bethenny Answers – This is the story of my life. This is what The Skinnygirl Dish is all about. Use what you have. Whatever vegetables and herbs you have lying around, turn into a creative salad. Leftover steak? Slice over greens with parmesan, lemon, olive oil, salt and pepper. Had hamburgers or turkey burgers at a BBQ? The next day, crumble, combine with tomato sauce and make a Bolognese over whole wheat pasta with parmesan. Open your eyes. Today’s leftovers are tomorrow’s culinary creations.

I have had the same question. Thanks to my mother in law, I now know how to turn leftovers into the most delicious breakfast. Potatoes, mushrooms, steak, broccoli, peppers or what have you can turn into the best frittata! Combine egg whites, soy or skim milk, fat free cheddar, plus ingredient(s) of choice, halfway cooked on the stove, and the rest in the oven for about 20 minutes at 350F and you can call it a meal!
Can you please share the brand of the face mask that you use, my mother-in-law keeps asking me to find out, as it made your face like glass…

I wish I were that creative when it came to seeing leftovers as something more than what smell in my fridge in about a week. I think I just can’t see the “forest for the trees” so to speak.. But I will try..
Freeze the leftovers and serve the meal another week. This will save you time another day and you are not eating the same thing over and over.
